Beef Mince Pie with a Twist

Ingredients:

  • 1x Brumby's Spinach & Feta Twist

  • 1 tbsp olive oil

  • 1 onion (finely diced)

  • 2 carrots (finely diced)

  • 2 celery sticks (finely diced)

  • 500g beef mince

  • 1 tbsp flour

  • 1/2 cup beef stock

  • 3/4 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup mozzarella (grated)

Method:

  • Step 1:

    Preheat the oven to 180 degrees celsius.

  • Step 2:

    In a large pan, heat the oil over medium-high heat. Add the onion, carrot, and celery. Cook until softened - around 6 minutes.

  • Step 3:

    Turn heat up to high. Add the beef and cook, breaking it up as you go. Turn down the heat to a rapid simmer (medium high). Cook for 30 minutes, stirring occasionally, until it reduces down to a gravy consistency. Taste, then add more salt if desired.

  • Step 4:

    Place the beef filling into a deep narrow baking dish, (as pictured), then cut the twist to perfectly fit on top of the filling and inside the baking dish.

  • Step 5:

    Sprinkle with grated mozzarella and bake for 30 minutes or until golden.

  • Step 6:

    Serve hot.
