Big Pizza Pie

Ingredients

  • 1 Brumby’s Supreme Choppa Loaf

  • ½ large capsicum (sliced)

  • Eggplant (3 slices)

  • 1 medium zucchini (sliced)

  • ½ red onion (thinly sliced)

  • 50g cheddar (grated)

  • 10 bocconcini (halved)

  • 10 pitted marinated green olives (halved)

  • Sopressa hot salami (9 slices)

  • 2 cups vegetable oil

Instructions

  1. Preheat oven to 200 degrees C.

  2. Over high heat in a large deep pan or wok, add oil.

  3. Once the oil is hot, shallow fry eggplant for one 1 ½ minutes on one side, then flip and cook for another 1 ½ minutes on the other side. Remove eggplant from the oil with tongs and place it on a plate lined with paper towel.

  4. Repeat this step with zucchini. Shallow fry for 1 ½ minutes then flip and fry for another 1 ½ minutes. Once done, place on paper towel.

  5. Shallow fry capsicum and onion together for 2 minutes and place on paper towel. Pat dry the vegetables with paper towel and set aside.

  6. Slice your Supreme Choppa Loaf in half and layer with sopressa. Add another layer with the eggplant, zucchini, capsicum and onion. Now top with grated cheddar, bocconcini and olives.

  7. Add the lid back on top and bake in the oven for 12 minutes or until cheese is melted and loaf is golden brown and crispy.

  8. Slice up into bite-size pieces and that’s Amóre!
