Ingredients
2 slices Brumby’s low FodMap bread
Lettuce
1/2 tomato, sliced
2 pieces cooked chicken schnitzel
Mayonnaise for spread
Method
- Toast two pieces of Brumby’s low FODMAP bread and top with lettuce, tomato, thinly sliced pieces of cooked chicken schnitzel (crumbed using low fodmap bread crumbs, chicken tenders and mayonnaise).
- Serve.

• 1 x CLT club sandwich
• Small bunch red grapes
• 1 small mandarin
• 2 seeded crackers
• ¼ cup low lactose cream cheese and herb dip
For dip – blend one tub of cream cheese with 2 tablespoons of mixed fresh herbs such as basil and parsley, and a pinch of salt and pepper.
