Ingredients

  2 slices Brumby’s low FodMap bread
  Lettuce
  1/2 tomato, sliced
  2 pieces cooked chicken schnitzel 
  Mayonnaise for spread


 

Method

  1.  Toast two pieces of Brumby’s low FODMAP bread and top with lettuce, tomato,  thinly sliced pieces of cooked chicken schnitzel (crumbed using low fodmap bread crumbs, chicken tenders and mayonnaise).
  2. Serve.

Items:

• 1 x CLT club sandwich

• Small bunch red grapes

• 1 small mandarin

• 2 seeded crackers

• ¼ cup low lactose cream cheese and herb dip

For dip – blend one tub of cream cheese with 2 tablespoons of mixed fresh herbs such as basil and parsley, and a pinch of salt and pepper.
