Mediterranean Bruschetta

Ingredients
1 Brumby’s Ciabatta
1 tbsp butter
6 cherry tomatoes (diced)
1 small cucumber (diced)
1/2 avocado
1 pickled red onion
Kalamata olives (diced)
Handful of rocket
1 tbsp feta
2 drizzles balsamic glaze
4 drizzles lemon-infused olive oil
Chilli flakes
Salt and pepper
Instructions
Melt butter in a pan over medium heat. Once the butter is melted, add two slices of Ciabatta to the pan. Make sure to soak up all the butter on both sides. Cook until lightly browned.
Drizzle the Ciabatta with the lemon-infused olive oil.
Assemble the rest of the ingredients on top with a drizzle of balsamic glaze, sprinkle of salt, chilli flakes and cracked pepper.
