Beef Mince Pie with a Twist
Who doesn't love a pie? Your family will love this easy to prepare twist on a favourite. Add veges of choice to bring a bit of extra goodness.

Ingredients
- 1 x Brumby's Spinach & Feta Twist 
- 1 tbsp olive oil 
- 1 onion (finely diced) 
- 2 carrots (finely diced) 
- 2 celery sticks (finely diced) 
- 500g beef mince 
- 1 tbsp flour 
- 1/2 cup beef stock 
- 3/4 tsp salt 
- 1/2 tsp black pepper 
- 1/2 cup mozzarella (grated) 
Instructions
- Preheat the oven to 180 degrees celsius. 
- In a large pan, heat the oil over medium-high heat. Add the onion, carrot, and celery. Cook until softened - around 6 minutes. 
- Turn heat up to high. Add the beef and cook, breaking it up as you go. Turn down the heat to a rapid simmer (medium high). Cook for 30 minutes, stirring occasionally, until it reduces down to a gravy consistency. Taste, then add more salt if desired. 
- Place the beef filling into a deep narrow baking dish, (as pictured), then cut the twist to perfectly fit on top of the filling and inside the baking dish. 
- Sprinkle with grated mozzarella and bake for 30 minutes or until golden. 
- Serve hot.
