Ingredients
2 cups uncooked quinoa
1 shredded cooked chicken breast
1 cup baked pumpkin (or any leftover baked veg)
1 cup small pan fried or baked cauliflower florets
½ cup fresh parsley
1 lemon juiced
3 tbspns extra virgin olive oil
Salt and pepper
Method
- Prepare the quinoa according to the packet directions, then mix through the chicken and vegetables, lemon juice and olive oil, salt and pepper to taste.
- Serve.
