Smashed Avo & Tomato Bruschetta

Smashed avocado and toasted sourdough are perfectly paired in this recipe to create the perfect brunch or weekend lunch.
Ingredients
Brumby’s Authentic Sourdough, sliced to preference of thickness
1 pint cherry or grape tomatoes halved
1 clove garlic
2 Tablespoons olive oil
1 Tablespoon balsamic vinegar
2 avocados smashed
Salt and pepper to taste
Method
1. Preheat grill or BBQ
2. Place slices of bread on baking sheet and spray with cooking spray. Grill 1-2 minutes on each side, or until golden brown.
3. In a medium bowl, combine tomatoes, garlic, olive oil, and balsamic vinegar.
4. Spread smashed avocado onto each bread slice, then generously spoon tomato topping on top. Sprinkle with salt and pepper, to taste. Serve immediately.
