Ingredients

2 x 2 cm-thick slices Brumby's Hi Fibre Loaf

1 boiled & chopped egg

1 tablespoon mayonnaise

pinch of salt & pepper

1 cup of mixed lettuce

2 teaspoons margarine

Method

1. Place boiled chopped egg, mayonnaise, salt and pepper into a bowl. Mash ingredients with a fork until evenly dispersed and mixed thoroughly.

2. Slice Brumby's Hi Fibre Loaf into 2 x 2cm or thicker slices.

3. Using a knife, spread margarine evenly on both of the Hi Fibre slices.

4. Evenly spread the egg mix as prepared in step 1 on slice. Layer the mixed lettuce on top.

5. Place the two slices of bread together and cut in half. Enjoy!
