Cheese and Bacon Pizza Pocket

  • Brumby’s Cheese and Bacon Rolls

  • 1/2 onion, diced

  • 2 garlic cloves, diced

  • 75g diced bacon

  • 1/2 chorizo, diced

  • 4 cup mushrooms, diced

  • 200g mozzarella, sliced

  • Handful basil + basil to garnish

  • 1 TBS olive oil

  • Sauce: 200g pizza sauce, 2 garlic, diced, handful basil, diced


  • Step 1:

    Pre-heat oven to 180 degrees

  • Step 2:

    In a pan on medium heat, add 1/2 Tbs of olive oil then add onion, once softened add bacon cook for 2 minutes then add chorizo, garlic, mushrooms and basil. Cook for another 5- 6 minutes. Remove from heat.

  • Step 3:

    To make the sauce: Add 1/2 tbs olive oil to a saucepan over medium heat, then add the garlic cook for 30 seconds then add the pizza sauce and the basil, stir and then cook for another 6 minutes on low heat.

  • Step 4:

    Cut a 2m slit on the sides of the cheese and bacon rolls, then use your hands to remove any excess white bread inside, be careful not to tear the bread open.

  • Step 5:

    Divided evenly between both, stuff the rolls with your bacon mixture, then stuff them with your mozzarella slices, leave 6 slices for the tops of the buns, then use a piping bag to pipe in the sauce, leave enough sauce to lightly cover the tops of the buns, then top divided evenly
    between both the mozzarella slices.

  • Step 6:

    Cook in the oven for 15 minutes, buns should be crispy on the outside and cheese melted and partially browned.

  • Step 7:

    Garnish with basil and enjoy!
