Ingredients

  2 cups uncooked quinoa
  1 shredded cooked chicken breast
  1 cup baked pumpkin (or any leftover baked veg)
  1 cup small pan fried or baked cauliflower florets
  ½ cup fresh parsley
  1 lemon juiced
  3 tbspns extra virgin olive oil
  Salt and pepper

 

Method

  1. Prepare the quinoa according to the packet directions, then mix through the chicken and vegetables, lemon juice and olive oil, salt and pepper to taste. 
  2. Serve.

• ¼ cup of artichoke and cream cheese dip

• Half small cucumber julienned

• 1/3 red capsicum julienned

• 1 nectarine – diced
